New Winter Menu


This winter our Chef Franco Pautasso propouse a brand new menu. Aromas & tastes that take us from the ocean to the mountains and from the old conteninent to the new one.


Fennel cream soup, green apple, pickled celery and broccoli, shallot, blue cheese and walnut bread

Bagna cauda, homemade bread, seasonal vegetables

Prawns, barley with sautéed portobello mushroom and broad bean, salted almond, cured ham and shellfish broth

Baby squid, potato and garlic cream, poached egg, herb bread bruschetta, squid ink vinaigrette

Veal carpaccio, roasted garlic, white balsamic vinegar and olive oil vinaigrette, caper, sweet potato, shallot, peanut, roasted bell pepper, Gruyère cheese and seasonal sprouts

Cucumber, avocado, roasted beet, heart of palm, radish, Patagonzola cheese and ciboulette salad with lemon and olive oil vinaigrette, beet sprouts

Main Courses

Octopus, mushroom, sun-dried tomato and bacon rice in a cast iron pot

Spinach and provolone cheese ravioli, saffron and white wine cream, roasted pumpkin, portobello mushroom, artichoke, almond and confit tomato

Patagonian trout, pumpkin and lemon creamy purée, black olives, tomato and basil vinaigrette, confit cherry tomato, sautéed pistachios

Line-caught hake, potatoes, garlic, parsley, sautéed almond, tomato, caper and white balsamic vinegar

Beef tenderloin tournedo, carrot and cardamom purée, roasted red onion, spinach and Gruyère cheese croquette, old fashion mustard, honey and garlic sauce

Lamb entrecote, herb croûte, beet purée, sweet potato, pickled eggplant, jus and red wine


Hazelnut and chocolate cake, orange sorbet

Passion fruit panna cotta, white chocolate crumble, dark chocolate biscuit

Banana parfait, peanut crispy dough, dulce de leche and caramelized banana

Corn and almond biscuit, chocolate and tangerine mousseline

White chocolate mousse, raspberry, lemon madeleine
